Step 1:
- Prepare the Sauce: In a bowl, mix the sour cream, cream of chicken soup, and diced green chiles until well combined.

- Assemble the Enchiladas: Place ½ cup of shredded chicken and 2 tablespoons of the prepared sauce in each tortilla. Sprinkle with Monterey Jack cheese. Roll up each tortilla tightly and place them seam-side down in the air fryer basket. Depending on the size of your air fryer, you may need to cook them in batches.

- Cook the Enchiladas: Air fry at 360°F (182°C) for 8-10 minutes, or until the tortillas are crispy and golden. You might need to flip them halfway through cooking for even browning.
Step 4:
- Top and Serve: Once cooked, remove the enchiladas from the air fryer. Top with any remaining sauce and sprinkle with shredded cheddar cheese. Return to the air fryer for an additional 2-3 minutes, or until the cheese is melted and bubbly.
