Instructions
- Preheat and Prepare:
- Preheat your air fryer to 350°F (175°C) for about 5 minutes.
- Lightly spray an air fryer-safe baking dish (that fits your air fryer) with nonstick cooking spray.
- Mix Ingredients:
- In a large bowl, combine the shredded cooked chicken, uncooked instant rice, cream of chicken soup, sour cream, frozen diced onion and bell pepper blend, diced tomatoes with chilies (undrained), chicken broth, fajita seasoning, and about half of the shredded cheese.
- Mix well to combine all ingredients thoroughly.
- Assemble the Casserole:
- Pour the mixture into the prepared baking dish and spread it evenly.
- Air Fryer Cooking:
- Place the baking dish in the preheated air fryer.
- Cook at 350°F (175°C) for 15-20 minutes, or until the rice is tender and the casserole is heated through. Depending on the size of your air fryer and the depth of your baking dish, cooking times may vary. If the top starts to brown too quickly, cover the dish with aluminum foil.
- Add Cheese:
- Once the casserole is cooked, sprinkle the remaining shredded cheese evenly over the top.
- Return the dish to the air fryer and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.
- Serve:
- Carefully remove the baking dish from the air fryer.
- Let it cool slightly before serving.
- Garnish with extra cheese, green onions, sour cream, and salsa if desired.
