Instructions

  • Prepare the Cake Batter (Time: 5 minutes):
    • In a large bowl, mix together the flour, sugar, eggs, baking soda, vanilla extract, and a pinch of salt until well combined.
    • Stir in the undrained crushed pineapple and chopped nuts (if using).
  • Preheat the Air Fryer (Time: 3 minutes): Preheat your air fryer to 350°F (175°C) for about 3 minutes.
  • Bake the Cake (Time: 35-40 minutes):
    • Lightly grease an air fryer-safe baking pan that fits in your air fryer basket (preferably an 8×8 inch pan if a 9×13 inch pan doesn’t fit).
    • Pour the cake batter into the prepared pan.
    • Place the pan in the air fryer basket and bake at 350°F (175°C) for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
    • If the cake is browning too quickly, cover it loosely with aluminum foil during the last 10 minutes of baking.
  • Prepare the Cream Cheese Frosting (Time: 5 minutes):
    • In a medium bowl, beat the softened butter, cream cheese, and vanilla extract together until creamy.
    • Gradually mix in the confectioners’ sugar until smooth and well combined.
  • Frost the Cake:
    • Once the cake is done baking, remove it from the air fryer and allow it to cool slightly in the pan.
    • While the cake is still warm, spread the cream cheese frosting evenly over the top.
    • Sprinkle with chopped nuts and coconut for garnish if desired.
  • Serve:
    • Allow the cake to cool completely before cutting into squares and serving.
