- Prepare the Muffin Batter (Time: 10 minutes):
- In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In a large bowl, whisk together the melted butter, milk, eggs, nutmeg, and vanilla extract.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Preheat the Air Fryer (Time: 3 minutes): Preheat your air fryer to 375°F (190°C) for about 3 minutes.
- Cook the Muffins (Time: 20-25 minutes):
- Line your air fryer basket with silicone muffin cups or lightly grease the air fryer basket.
- Divide the batter evenly among the muffin cups.
- Place the muffin cups in the air fryer basket and cook at 375°F (190°C) for 15-20 minutes, or until a toothpick inserted into the center comes out clean. You may need to cook in batches depending on the size of your air fryer.
- Allow muffins to cool in the air fryer basket for 5 minutes, then transfer to a wire rack to cool completely.
- Cinnamon Sugar Coating (Time: 2 minutes):
- In a shallow dish, mix together 1/2 cup granulated sugar and 1 tablespoon ground cinnamon.
- While the muffins are still warm, dip the tops into the cinnamon sugar mixture, pressing gently to adhere.
- Make it Crispy (Optional): For a crispy top, return the coated muffins to the air fryer and cook at 375°F (190°C) for an additional 2-3 minutes. Keep an eye on them to avoid overcooking.
- Store and Reheat:
- Store cooled muffins in an airtight container at room temperature for up to 3 days.
- Reheat in the air fryer or microwave until warm and crispy.
