- Prepare the Corn: Drain the whole kernel corn and discard the liquid.
- Mix the Batter: In a bowl, beat eggs with salt and pepper until well combined. Add flour and baking powder, whisking until a smooth batter forms.
- Add Corn and Cheese: Stir in the drained corn and shredded cheese until evenly mixed.
- Pre heat the air fryer: turn on the air fryer at 350F for 3 mins and put some olive oil in it.
- Air fryer the Fritters: Drop spoonfuls of the corn mixture into the air fryer. Cook until golden brown on one side, then flip and cook the other side until golden and crispy.
- Drain and Serve: Remove the cooked fritters and Serve hot, garnished with chopped parsley.
