- Marinate the Chicken:
- In a large bowl, combine the olive oil, cumin, coriander, paprika, turmeric, cinnamon, allspice, garlic powder, onion powder, black pepper, salt, lemon juice, and Greek yogurt (if using).
- Add the chicken thighs to the bowl and toss them in the marinade until they are fully coated. Cover the bowl and marinate in the refrigerator for at least 1 hour, but preferably overnight for best flavor.
- Preheat the Air Fryer:
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
- Cook the Chicken:
- Place the marinated chicken thighs in a single layer in the air fryer basket. You may need to cook in batches depending on the size of your air fryer.
- Air fry the chicken at 375°F (190°C) for 12-15 minutes, turning them halfway through the cooking time. Cook until the chicken is golden brown and has an internal temperature of 165°F (74°C).
- Rest the Chicken:
- Once cooked, remove the chicken from the air fryer and let it rest for a few minutes. This helps the juices redistribute throughout the meat, making it more tender.
- Serve:
- Slice the chicken thinly and serve it in pita bread or flatbread with your favorite toppings such as lettuce, tomatoes, cucumbers, pickles, and a drizzle of tahini sauce or garlic sauce.
