Preparing the Baby Potatoes

Wash the baby potatoes in Kitchen Colander thoroughly under clear running water. Make sure there is no dirt remaining on the surface. Since we are using these with the peels on, this step is important.

After washing, pat them dry completely with a kitchen towel. No moisture should remain. Clean the peel of any dark spots or extra tuber growth. Now they are ready to be seasoned and air fried.
Seasoning the Baby Potatoes

Take a Mixing Bowl and add dry baby potatoes to it. Add Olive oil and coat the potatoes well with the oil. Now add the seasonings – rosemary dry, Kosher Salt, Garlic Powder, Paprika. Coat the potatoes well in the seasoning.
Air- Frying Baby Potatoes

Before you start the whole procedure, pre-heat the Air fryer for about 4-5 minutes at 390*F.

Now place the seasoned baby potatoes in the air-fryer basket. And air fry these at 390*F for about 18-20 minutes till you reach the desired crispiness of the potatoes. You have to give it a good shake in between, at about 9-10 minutes mark for even air-frying.

I air fried for about 18 minutes. These were crispy from outside and tender from inside
Baby Potatoes Sour Cream Dipping Sauce

Just mix all the ingredients – sour cream, kosher salt, parsley, mint and Lemon juice. Mix them well to combine. The Dipping Sauce is ready.
