Lighter Bread and Butter Pudding

  1. Cut each slice of bread into 4 triangles
  2. Place them in an oven proof dish overlapping.
  3. Whisk together the eggs, yogurt, vanilla, lemon zest and ½ tablespoon of brown granulated sweetener
  4. Pour this over the bread and leave to soak for about 20 mins until the bread absorbs the egg mixture.
  5. Preheat oven to 180c, 160c fan, 350f (gas mark 4)
  6. Sprinkle the soaked bread with the sultanas (or raisins), sprinkle with the other ½ tbs of brown granulated sweetener.
  7. Spray over the top with spray oil
  8. Place in the oven and bake for approx 30-40 mins, until nice and golden on top.
  9. Enjoy!
