  1. Blitz all the piri piri sauce ingredients together in a food processor until it becomes a smooth paste. Use this to marinate the chicken and to cook it in.
  2. If using a slow cooker, add the chicken, peppers and onion in with the peri peri sauce and heat on low for 7 hours or high for 4 hour, OR Place the chicken in a large dish and place in a pre-heated oven at 170 C and bake for about 35 minutes.
  3. Meanwhile prepare your chips, you can also use oven chips for ease.
  4. When the chicken is ready, pull it and shred it using 2 forks, and mix the chicken in with the sauce onions and peppers to create the topping.
  5. Fry off your halloumi in small chunks.
  6. Mix all the mayo ingredients together and add to a squeezy bottle if you have one.
  7. Layer up your chips, chicken and halloumi, then drizzle with the mayo and top with spring onions.

NOTES

The chicken is cooked perfectly in a slow cooker.
