Chicken katsu curry

Japan’s best-known contribution to the world of curry features chicken slices coated in crunchy breadcrumbs and a mild curry sauce

Ingredients

  • 4 skinless and boneless chicken breasts
  • 2 slices wholemeal bread from a small 400g loaf
  • Finely grated zest of 1 unwaxed lemon
  • 3 eggs, beaten
  • Low-calorie cooking spray
  • Shredded spring onions and chilli, and plain boiled rice, to serve

For the sauce:

  • 2 onions, sliced
  • 5 garlic cloves, crushed
  • 2 carrots, grated
  • 1 level tbsp mild curry powder*
  • 1 tbsp tomato purée
  • 600ml hot chicken stock
  • Pinch of sweetener granules
  • 4 tsp soy sauce
     
    *Spice blends are Free so long as they’re made from herbs and spices only and don’t include any Synned ingredients like sugar, flour or oil. Check the label to be sure and count the Syns as necessary.
