- Add the onion, mushrooms, broccoli, chorizo and sweet potato and fry for about until lightly golden.
- Add the garlic and sun-dried tomatoes and fry for a further minute,then transfer the contents of the pan to a bowl and set aside.
- Return the empty pan to the heat. Add the gnocchi and fry for a
couple of minutes until lightly golden, then return the mushroom
and sweet potato mixture to the pan. - Stir in the stock, milk, cream cheese and tomato purée and simmer for a few minutes until the mixture is creamy and well combined.
- Stir in the spinach until wilted.
- Top with the cheese and bake in the oven until bubbling and golden (around 20 mins on gas mark 7)
