- Heat pan at a high temperature, with low cal spray oil.
- Add the vegetables and fry for around 5 minutes, until they are crispy.
- Remove the vegetables from the pan.
- Reheat the pan with more low cal spray and add the chicken, with the spices and chipotle paste.
- Cook until the chicken is cooked through.
- Add 60ml of water and simmer for 5 minutes.
- Put the vegetables back into the pan and reheat while stirring all of the ingredients together.
- Serve in soft wholemeal taco boats and top with 1 tbsp Dairygold Deli Smokey Chipotle mayo.
