Instructions
- Spray a non-stick frying pan with low-calorie cooking spray and put it over a medium heat.
- Add the shallot (or spring onions), pepper and herbs and cook for about 5 minutes or until starting to soften.
- Add the tomatoes and cook for a few more minutes.
- Halve the pitta bread into 2, scatter over the cheese and lightly toast.
- Top with the cooked veg and sprinkle with fresh oregano to serve
