  • 1 shallot (or a couple of spring onions), finely chopped
  • 1 small red or yellow pepper, deseeded and roughly chopped
  • ½ tsp dried herbs
  • 4 cherry tomatoes, chopped
  • 60g wholemeal pitta bread
  • 70g reduced-fat mozzarella, cut into chunks (or 40g reduced-fat Cheddar, grated)
  • Fresh oregano, leaves picked, to serve
