- 2 tbsp soy sauce or tamari
 - 300g plain firm smoked tofu, drained and cut into small chunks

 - 4cm piece fresh root ginger, peeled and freshly grated

 - 200g baby corn, sliced on the diagonal

 - 100g fresh bean sprouts, rinsed
 - 2 tbsp chopped fresh coriander, plus sprigs to serve
 - Grated zest and juice of ½ unwaxed lemon
